- 1 kg of flour
- 1.5 oz of wheat
- 300 ml of yeast
- 350 oz of butter milk
- 5 egg yolks
- 5 egg whites
- 5 tsp of cooking oil
- 14 oz of ground nuts
- 5 tsp of black cocoa cake filling
- 12.5 oz of sugar
- 5.8 oz of pie filling
- 1 orange
- 1 lemon
- 2 bottles of 5 ml each essence of rum
- 0.7 oz of salt
It is the first time that I make this cake, called in Romanian “Cozonac”, a panettone cake type for easter but maked in home, with wheat flour, yeast, cooked in special conditions of stifling heat in the kitchen, no drafts, no open or close the window or door of the kitchen.
See how to make Cozonac or Romanian Easter cake:
1. Start with the pie filling. The 5 egg whites are beaten well, mix with half the quantity of sugar, 5 ml of essence of rum and 0.35 oz of sugar with vanilla. The nuts are finely crushed and filled with 5 tsp of cocoa and then incorporated.
2. Separately put the cake batter in a very large bowl, spilling deep 1kg of flour, a hole is made in the middle and thoroughly mixed with 300 ml of yeast, milk and 2 tsp of sugar. Put the f Flour with yeast and milk into the flour until the yeast begins to bubble and spill over into the rest of flour left, then incorporated egg yolks, 2 gr of salt, finely ground bark orange, lemon peel finely ground, 5 ml essence of rum, 0.35 oz of sugar with vanilla.
3. Mix all the ingredients. Put the dough in bowl with flour large ball of dough with flour and allow it to grow in the bowl covered with a sheet of aluminum.
4. After an hour we returned to the kitchen, and tend each dumpling dough sheet, quarter sheet where we landfill.
5. The dough sheets are rolled. In total there are 4 rolls of dough stuffed with nut paste, cocoa and egg whites.
6. Edible oil smeared with two deep trays, two rolls of dough are twisted and placed in a deep pan and then the other two rolls are braided and put into another deep pan.
7. Put the dough in the and let it cook. Test it by inserting a knife or a wooden stick into the cake.
